An appetizer is a small first course of an overall meal. Common examples include: shrimp cocktail, calamari, salad, potato skins, mussels, bruschetta or cheese and crackers. An appetizer may also be very elegant in some restaurants.
Typically smaller than a main dish, it is often designed to be eaten by hand (with minimal use of cutlery).
In restaurants or large estates, appetizer is prepared in a garde manger which is a cool room. Appetizer is often prepared in advance. Some types may be refrigerated or frozen and then precooked and then reheated in an oven or microwave oven as necessary before serving.
